Cold Cream Leek Soup

Ingredients (4 people)

  • 1kg leeks
  • 2 potatoes
  • 30g butter
  • 4.1 liter cream
  • 1 handful chopped parsley
  • Salt and white pepper


  • In a saucepan with butter cook the sliced ​​leeks and potatoes cut into cubes, until the leek is transparent.
  • Then add a quart of water and let it boil for twenty minutes.
  • Then add the cream and cook five minutes more.
  • Season with salt and pepper.
  • Puree soup in blender.
  • Serve cold cream decorated with chopped fresh parsley.
